The Journey of the Pink Lady Food Truck

The Pink Lady Food Truck can be seen all over Southeast Texas and Southwest Louisiana. Its facebook timeline advertises: free Home Deliveries, Events and Grand Openings, and Catering. Judging from the reviews, her gumbo, etoufee, beef tips, and chicken salad sandwiches are well received. One satisfied customer summed it up this way: “Stalk this food truck if you can. You won’t regret it!”

            And apparently, The Pink Lady was stalked. Last year, in her first year in business, she won Best Food truck in Orange County, as noted by The Orange Leader, the local newspaper.

            Jenny Stark, owner of the Pink Lady, and I first met in 2010 when I interviewed her for Created Woman during Breast Cancer Awareness Month. Pause: do the math. As of this writing, eleven years have passed as a cancer survivor. Could I get everyone reading this devotion to stop and mouthed, “Praise the Lord!” It doesn’t get much better than that!

            And so, the years have gone by since that first interview, and Jenny and I have stayed in touch. I recently ran into her in Walmart, and we stopped and chatted. The Pink Lady, of course, was the center of our conversation. I expressed to her my amazement at what I was seeing and hearing about her new business. I asked her the obvious question, “When and how did you get into the food truck business?”

            And thus, she began telling me about her God-given dream of owning a food truck, and how it came into being.

            In Jenny’s words:

            In 2019, I was on a trip to Israel with my church. A friend of mine on the trip asked me what I would like to do. I responded that I love to cook, but I would never want a day-to-day restaurant, but would love someday to own a food truck. Day-after-day, she would bring up the subject and ask questions like, “What do you want to name your food truck, and I would say, ‘I don’t even own a food truck.’” She would always respond by saying, “I know, but when you get one, what will you name it?”

            Several days later, as we were shopping in Israel, I saw a shop named “The Pink Lady.” I instantly knew this is what I would name my truck. We went to pick up some clothes at a local laundry mat and a man came out carrying a PINK LADY bag. I knew it was a sign to me.

            After our trip ended and we were back home in Orange, my friend would call and ask me if I had found a truck yet. So, I started looking and I found the perfect one that definitely had potential, but needed some TLC. I told my friend that I would paint it pink, and she suggested that I have it wrapped. (marketing practice of covering a vehicle in vinyl advertising material) I looked online and found someone nearby who could make my dream come true. Once The Pink Lady was ready, all I needed was to work my first event.

            And so it was, my very first event was at my friend’s shop in Orange, the same friend who encouraged me all this time, starting on our trip to Israel. I thank God for making my dream come true and using my friend, Laurie, owner of The Orange Key, to encourage me.

            Since the name has nothing to do with what I sell, it prompts people to ask me why I named it The Pink Lady, and it gives me an opportunity to respond that I am a breast cancer survivor and how Jesus healed me of cancer.

“So, Jenny, I asked, “What is your favorite scripture in regards to your life?”  Without hesitating, she quickly blurted out, “For I know the plans I have for you, declares the Lord, plans to prosper you and not to harm you, plans to give you hope and a future” Jeremiah 29:11NIV.

I can’t wait to see where all The Pink Lady and Jenny travels take them.
