Healthy Crockpot Chicken Corn Chowder

Here we are again in our busy spring time season.  With two kids in different sports, late night practices and hectic afternoons, the challenge of having a healthy meal together seems to increase with every passing year.  This week, I pulled off an easy Crockpot recipe that was a hit by everyone.  Well, let me be honest.  My seven year old was not a “fan,” as he says, of the potatoes.  None the less, it worked.  We did not eat out, managed to eat together and got in a little nutrition with this Healthy Crockpot Chicken and Corn Chowder.

Ingredients

  • 2 cups frozen corn
  • 1 clove of garlic
  • ½ chopped onion
  • 3 medium size potatoes diced
  • 4 cups of chicken broth
  • 2 cups of skim milk
  • 3 chicken breast
  • 8 slices Extra Lean Turkey Bacon
  • 1 cup of shredded Colby jack cheese
  • 1/2 TBS of Cajun Seasoning
  • Salt and Pepper
  • 1 Bay Leaf

Directions

  1. Place all ingredient in Crockpot with the exception of bacon and cheese
  2. Cook on low for 8 hours
  3. When ready, cook bacon in microwave until crispy
  4. Chop up bacon and stir in along with shredded cheese

Serves 6

A little more than 1 cup serving

Calories – 400

Fat – 11gms

Protein – 44gns

Fiber – 2gms

Add in a tossed salad to get in more greens and vegetables

Give it a try.  Next time I plan on doubling this recipe for additional leftovers.
