Chuy's Creamy Jalapeno Ranch Dressing

Texas is loaded with Tex Mex restaurants but only Chuy's Tex-Mex Restaurant has an Elvis shrine in each of its locations. Austin can boast that it is the home of the original restaurant but Chuy's has now expanded to San Antonio, Houston and Dallas as well as Alabama and Tennessee. In fact, keep your eyes peeled because if you live anywhere in the south, one of these eclectic restaurants might show up in your neighborhood. While their food is considered Tex Mex, the menu carries several dishes that have a southwestern flare like the blue corn tortillas and the Hatch Green Chile Sauce. All that said, a visit to any of the Chuy's restaurant begins with a basket of chips and their famous Creamy Jalapeno Ranch Dressing/Dip. If you search the web, you'll find numerous copycat recipes but I found this one to have great reviews.
